Aaaaaa, kolokithokeftedes
This recipe is dedicated to my Gpa George who passed a month ago, it was one of his favorite treats and dishes, because in my house, kolokithokeftedes was a snack and not a meal. He always was ready for some zucchini patties if someone asked and always made them with greek feta cheese. He made them so much that I never had to really ask him to teach me since the recipe is so quick and easy, I could memorize it, just by looking at him making it. It happened to be also my daughters Zoe favorite meal, she loves it. While we were shopping today she grabbed a zucchini and said “Mommy can you make this, to look like pancakes” I was clueless for a minute because she likes sweet pancakes also, but then knew what she meant. Yes honey, mommy will make you some zucchini patties.

Ingredients makes 9 medium patties:
- 2 medium zucchini
- 4 soup spoons of all purpose flour
- salt / pepper / garlic powder
- 1 whole egg
- yogurt for topping ( if desired )
- soy sauce for saltiness ( if desired )

greek feta cheese is missing. I forgot to buy some, but I also make the zucchini patties a lot of times without it.

wash & peel the zucchini. leaving most of the zucchini skin. I just cut down the dark spots the zucchini had.

thats what it should look like- set it aside five minutes and drain any water that comes out in the bole of the vegetable.

this is the soup spoon. In my house we measure with a soup spoon, ok :)! It should be 4 generous spoon fulls

the key to good zucchini patties is the hot pan. heat up your pan before dropping the mixture in for cokking

I needed some type of sauce to go with it so I added soy sauce, and I loved it. I also love soy sauce what can I say :-/ :)!
