Cooking healthy is not a problem in our household, I always try to cook healthy, plus my husband wants a protein meal everyday due to his workouts. Me however, …..lets just say I do eat healthy but snack a loooot during the day too. But how can you not eat much around a great cook like myself lol. I make this dish all the time, when we have salmon, my 5 year old loves it and so does my husband, now if you are on a diet, this meal is gluten free but NOT fat free, there is creme fraiche 30% fat in this dish. I want to explain why I used creme fraiche and not cream in this dish. I find cream is more liquidier and creme fraiche more solid and creamier, so when you cook and reduce creme fraiche, it becomes this very very thick creamy sauce. Thats all! The rice I used was my left over pesto rice I had made the other day. So I just simply warmed up the rice on each plate in the microwave and added the salmon with the sauce on top. All ingredients were purchased at the supermarket LIDL. This recipe feeds three adults.
Ingredients:
- 1 medium carrot
- 1 green bell pepper
- 6 white mushrooms
- 200gr creme fraiche
- 3 salmon filets ( I used frozen )
- 1 cup cooked rice for each plate
- salt/pepper/garlic powder
- 2tbs olive oil
- chicken stock cubes
- 2 cups water
