Braised chicken in tomato sauce with mashed cauliflower

Kokkinisto- Braised meat-has been in my families household for ever and is a every Sunday classic. My mother makes braised meat, she chooses one week chicken the other lamb and the other beef or pork. When all the fam gathers up in Greece at my Gpas House we all have a HUGE Sunday lunch, EVERY Sunday, where there is lots of food, a braised meat dish and lots of yelling and loudness :). In  a good way, we have temper and are loud, that’s all :D! Since hubby is trying to eat clean two years now, I repeat, trying, because I am however a good cook :-p  and its impossible to just have protein and veggies. Well a little goes a long way and he and our daughter is my favorite tester & food critic  :D! I used chicken for braising this Monday, ups Im one day late, but I think my Gpa will forgive me. Of course we want carbs, but I wanted to make it a bit healthier, so I left out the red wine since I feel that dishes with red wine make the food heavier and added some potatoes and a whole cauliflower and mashed it. Oh it was divine and you couldn’t have just one plate. This recipe feeds 8 adults and a shih tzu dog, because we cook for our Suzi daily, yes I do, don’t judge me shes family.

 

Ingredients:

  • 1kg chicken breast
  • 500 gr shallots
  • 1 head cauliflower
  • 6 small potatoes
  • salt / pepper/ red pepper powder, garlic powder
  • 250 gr tomato juice
  • 2 tbs dried oregano
  • 2 tbs frozen herbs
  • 2tbs butter
  • 1 cup whole milk
  • 2-3 bay leaves
  • 5 cups water
  • 3tbs olive oil

clean and peel potatoes, shallots & cauliflower

slice the shallots and cube the potatoes

boil the potatoes and the cauliflower together. Do not preheat the water, add the ingredients in the cold water so that everything cooks evenly at the same time.

once is boiled rinse of the water- added some potatoes because we dont want anyone to have a carb withdrawal

I used a handmixer since my masher is packed, but I find that this way it worked even better. Add the butter, milk, salt & pepper

add the olive oil and  saute shallots just a bit

add garlic powder, bay leaves, salt, pepper & red bell pepper powder

once you see the chicken is white add the dry oregano, tomatoe sauce & water

Let it braise for 45 min

The onions melted and the dish has such sweetness from them, you dont even know they exist, leave them out if you dont like  onions. And now I get to eat this.
