Potatoe Salad with cherry tomatoes, olive oil and low fat cream cheese

This is the fastest non complicated potatoe salad.I dont ever buy salads such as potatoe salad from the super market, why? because I can make better salads and without msg :).I couldnt wait until tomorrow and had a so called in german “heisshunger” and had to have this at 9pm, please excuse the dark pics.I make everything from scratch and had to have this salad, YES during THIS time of the day 9pm :).Those extra calories are worth it at 9pm, what the heck :).

 

Recipe includes:

  • 10 cherry tomatoes
  • 7 medium broiled potatoes with skin ( you can cube or slice them )
  • 2 tbs olive oil
  • 2 tsp lemon juice
  • salt/pepper
  • herbs ( I buy mine fresh and chop them up and freeze them, here is basil and parsley)
  • Philadelphia low fat cream cheese ( one container has 175 g, I used half of it )

 

Follow instructions below and you will have a tasty 9pm carb salad 🙂

I first broil the potatoes. You know when they are done by sticking a fork in them and they slide away from the fork. Slice the potatoes and add tomatoes, salt/pepper.

add the frozen herbs and olive oil.

add the cream cheese and stir again.

Voila, you cant just eat a little bit 🙂
