We were out and about since my mother in law is visiting us here in Germany from the US.I havent shopped the past several days and Im all about figuring things out and going along with what I have in the pantry.I always have potatoes in my pantry at home( since I make lots of stews greek style, more about those recipes please look on the greek page )So today I had to come up with a fast and easy, yet healthy meal due to that we were busy doing things all morning which Im very happy about.This meal is fast, healthy and yaaaammmi or as we say “lecker” here in Germany.
Recipe feeds 4 people and includes:
- *4 boneless chicken breast
- *1/2 oven roasted broccoli ( I used left over from last night, more on how I make this on the veggie page )
- *8 big potatoes ( any kind you like will work, I also had left overs here for dinner. So I basically cooked mashed potatoes for 8 people, but you know, Im greek, so we have to have more just…if …. what IF :))
- *200 ml buttermilk
- 1 red medium onion
- *2 kraft singles cheese slices ( how do you call those in English?)
- salt & pepper as desired
Improvise Gravy: sauteed red onions, mushrom soup, any package, I used the brand Knorr here in Germany.
Instructions:
cut potatoes in quarters, leave skin on, broil until you stick a fork in and the potatoe slides away. When done add the ingredients and mash away. For the chicken, preheat oven to 350 degrees 180 celcius place the frozen chicken breast to a pan and throw them in the oven for 35 minutes or longer if you like yours extra crispy.
