Sun was bursting through my kitchen window this afternoon, and yes even though its still cold I love that the days get longer :D. My kitchen is my happy place. This spring chicken arugula quinoa salad is what I need in my diet right now.My 5 year old daughter loves loves loves quinoa.This recipe feeds 4 people.
Ingredients:
- 250 gr quinoa
- 6 cherry tomatoes
- 150 gr chicken snack pack
- 2 cups chopped arugula
- lemon, salt /pepper
- 2 tbs olive oil
- 1 medium chopped red onion
