Traditional Greek Spanakorizo- Spinach risotto

A very healthy casserole / stew, (I dont  know if I can call it a stew or a soup ?) you can make it soupier or stewier by adding more water as the rice cooks. Growing up we had this meal once a week, my mom used to say and still is of the opinion  to eat Spanakorizo, Beans,& Lentils casserole once a week.

Recipe:

500 gr spinach

1 chicken cube

1 cup rice ( any kind you have at home )

3 tbs olive oil

water as desired

This meal is even better with goat cheese on your portion and a little lemon.

500 grams spinach. 500 gram Spinat

add 4 cups of water until spinach has cooked down, add 1 cup of rice and a chicken cube

add 3 tbs of olive oil. Cover rice and spinach with water and bring to a broil. Leave it on medium heat for 5 minutes, put the lid on and turn off the heat, let it sit on the stove until rice puffs up.
