This recipe has been in greek family homes forever. Growing up in my mothers home, she used to say this every week ” we have to eat, one lentil casserole one green casserole and stews at least five times a week” by that said, we did eat five times a week stews and saturday was our noodle day due to shopping and no time to cook. Sunday was always, I mean always and to this day a meat meal.
I love stews and I love this one especially, because what can I say, I am a potatoe girl :)!
Here is how you can make this delicious fast and healthy stew in just 45 minutes and feeds a family of 4 or 5 to 6 regular people with this recipe, but you know, Im greek we cook more just in case someone shows up and is hungry :)!
- 2 bay leaves
- 2 tbs tomatoe paste
- 2 tsp olive oil
- 6 medium / big potatoes
- 2tsp dry oregano

cube your potatoes as big or small as you like, throw them in the pot with bayleaves, olive oil, tomatoe paste and bayleaves, cover them with water.

My gmas dried oregano from Greece! I treasure this for a long time now and use really just a bit as I need it.

add the oregano or herbs as desired. I mashwith my spoon two or three potatoes for a starchier stew.
