My husband has changed the way he eats since March 2014 and he needs lots of protein.
I am trying to come up with new low fat and low carb dishes for him and the fam.
This one is super easy and fast, I just threw in the pan whatever veggies I had in the fridge and sauteed them Asian style.
Here the recipe:
- 2 medium zucchini, I cut it in thin stripes
- 2 medium carrots
- mushrooms as much as you like ( I use a lot because I love them and I can sit in them)
- 2 medium red onions
- 1tbs olive oil
- 300 gr salmon-big portion (64 gr proetein)
- or 150 gr salmon regular portion (32 gr of protein)
- or 100 gr salmon smal portion ( 21 gr of protein)
- 1 tsp pepper
- 3tbs soy sauce
- red pepper falkes if you like your dish a little spicy
- 1 cup brown rice
Execution:
I sprinkled the frozen salmon with salt and pepper and baked them in the oven with a little drizzle of olive oil in 400 degrees or 200 celcium for 30 minutes, because we like our fish crispy and dont forget the 64gr of protein you are getting from this dish. I sauteed the veggies with the olive oil until they are caramelized but the carrots still a little bite to them. If the veggies need more moisture or oil, I simply add 2 tbs water so that it can keep saute them but without the fat.
I added brown rice to the dish for good carbs, I always have brown or white rice in the fridge because its a must for the hubby! Please check out my post on how I make my brown and white rice.
Add lemon to your fish if desired!
