Today Im thankful about cameras and zoom function, we are moving and Im glad I still got good pictures but my messy kitchen wasnt showing :).
This recipe, dinner idea for tonight was inspired by the german “Flammkuchen“, the classic thin Flammkuchen has onions, Speck / bacon and sauerrahm / sour cream, which is spread onto the dough. I also wanted to make a fast dinner since we are in a move mode, but I really kinda look for excuses to cook just another meal before we leave :). It was creamy, yummy, smooth & smokey from the bacon. With this carb dish you really need a nap afterwards, but its oh so worth it. My mouth is watering again-Im getting hungry. So as I said we are moving and have to be out middle of June so I am not shopping very much, when going to the store I couldnt make up my mind on which Tortellini I wanted to eat tonight, ( girl problems ) but thankfully my husband took over this decision and wanted me to make the RANA Gourmet fresh tortellini, filled with goat cheese and roasted onions. I still bought the ones I wanted and will cook them sometime this week for a fast meal :). This bag feeds 2 adults. I bought brand RANA the first time and hubby and I are pleasantly surprised, it was really good, but to be honest, nothing is as yummy as a fresh tortellini of course, but Im not about to make them from scratch while moving lol. I added to the Flammkuchen inspired sauce some mushrooms, why, because I think cream and mushrooms are for ever married :). This is what we had for dinner tonight, I bet you want to make some tortellini now :).
Ingredients used:
- 3 small red onions
- 150 gr bacon bits – bauchspeck, I usually buy the fat reduced ones from Aldi but Kaufland didnt have them
- 7 small mushrooms
- 200 gr cream
- fresh tortellini from the refrigerated section- I used brand RANA in this recipe
- 1tsp olive oil-for sautee the onions and bacon
- 1 cup water for thw tortellini

I wanted a crisp tortellini so I let the water evaporate and had a crisp & crusty tortellini just how I wanted. You can just broil them if you dont like them crispy.

added some butter in the pan to finish up the tortellini-see how they shine? Also some of the goat cheese came out and caramelized in the pan

bubbly & creamy. Heads up, I havent added any salt to the sauce, the german Bauchspeck is very salty by itself already
