Oven roasted gluten free beef meatballs with potatoes

Hey ya’ll, its been a minute, but I kinda had a Baby, he turns two months old tomorrow, so we have been snuggling a lot and we also went on a nursing vacation together, more from our new fam member in another post. Today I made a very simple oven dish, gluten free meatballs with potatoes. Oven roasted meals are so easy, even my husband can cook them by watching only once, well, it took two or three times for him to be able to make chicken and rice in the oven, but hey, whenever he makes it, its perfect and delicious. Sorry I totally missed taking step by step pics but I promise I wont forget on the next recipe :D. This dish is Greek inspired “keftedakia me patates” with lots and lots of yummy delicious olive oil.  I used the lean version, ground beef, the Greeks usually use pork and I also haven’t added any breadcrumbs. YES, the meat is a little dry, but it tastes just the same to us and is healthier and cleaner. What I do is, I add garlic, salt & pepper to the ground beef, then roll small meatballs. I cut my potatoes country /village style and leave the skin on. Please wash your potatoes before doing so. Salt & pepper the potatoes add the olive oil and water, mix the potatoes well with your hands. Get in there good so that all potatoes have the salt & olive oil. Then add the meatballs on top. In your preheated oven, place your pan and cook for 40 min until meatballs are crisp and potatoes fall off the fork. That means they are done. Here what you need to shop to feed 4 people with this meal.

 

Ingredients

 

  • 500 gr lean ground beef
  • 5 big potatoes
  • half cup olive oil
  • 2 cups water
  • salt, pepper, garlic
