Ok, guys, this Easter salad I made like two years ago? Dont really remember, but this recipe has been unedited on my blog. Unfortunately I havent snapped too many pics while prepping it, so I’ll explain as good as possible whats going on in that bowl :D.
By the time the Easter Party was done, The bowl was also empty, and I believe I left it at that friends house who moved :). But its just a bowl so no worries.
I hope you give this salad a try and like it as much as our friends did.
Ingredients:
- boiled eggs
- cooked white rice
- feta cheese
- rucolla salad
- tomatoes
- cucumbers
- green olives
- red onion
- olive oil
Execution:
Cook the rice, let it cool, boil as many eggs as you like, cut tomatoes & cucumber in cubes, shred some rucolla leaves, cut green olives, cut red onions. When the rice is somehwat cooled, add the salt, pepper, olive oil and all your veggies except cheese and eggs. Combine the ingredients well. Add MORE olive oil :D. It needs to have a lot :). Then when you are finished mixing, add the cheese, you can crumble it with your hands. When the cheese is on top of the rice you can now add the boiled eggs as desired. I made it look like a somewhat flower.
